Coriander Chicken Fillet

Coriander chicken fillet, saffron potato, caramelised green bean and onion with mushroom sauce, prepared in 55 minutes only and serves 4.
Best when served hot.

PREPARATION TIME: 55 min                                                                                                

FOR THE CHICKEN

  • 4 chicken fillets
  • 1tsp ground coriander
  • 1\2 cup olive oil
  • 1tsp red pesto
  • 2 garlic cloves (chopped)
  • Pinch of salt and pepper

FOR THE POTATO

  • 4 large peeled potatoes
  • Pinch of saffron spice
  • Salt
  • Ground pepper

FOR THE GREEN BEAN AND ONION

  • 300g fresh green beans
  • 1 large onion (cut into rings)
  • 4 tsp honey
  • 100g salted butter
  • 2 tsp vegetable stock

Method:

For the chicken:

  • Place the chicken, ground coriander, red pesto, garlic, salt and pepper and olive oil in a mixing bowl. Marinate it for 2 hours.
  • Meanwhile, place the peeled potato in a pot of boiling water with saffron, salt and pepper cook till ready.
  • Blanch the green beans, place butter in a pan and honey add onion and vegetable stock let it simmer and caramelized. 
  • Pre-heat the grilling pan add olive oil, add the chicken till it is cooked for 25 min.

Serve hot.
